Mushroom Pizzas
These are a lovely alternative to a pizza base and mushrooms are packed with vitamin D, one of the only food sources. They have an abundance of B vitamins and plenty of minerals (iron, potassium, magnesium, selenium)
You need to cook them in the oven on top of little donut shapes made from aluminium foil - this stops the mushrooms from being wet and soggy, as they will release a bit of juice.
You will need:
Large Portobello mushrooms (as many as you wish, usually one per person works)
Sweet potato, chopped into small pieces
Onion/s, chopped finely
Cherry or Baby Truss Tomatoes, halved
Pesto (see below for recipe)
Preheat your oven to 180 degrees celsius
Combine your onion and sweet potato and sauté in a little olive oil until soft. At the end, place the halved tomatoes, cut side down, to sear them a little.
Make your aluminium foil donut rings
Place your mushrooms on top, cut out the stems first
Fill with your sweet potato & onion mix
Place on your cherry tomatoes, cut side up
Top with pesto
Cook for 15 minutes or until the mushrooms are softer, then enjoy!

Basil (lots of it!)
Pine nuts, lightly roasted
Garlic to taste
Lemon juice
Salt & Pepper
